Jets on motorcycles are the same as jets on the older carburated cars, they are 'screws' in the carb with a precision hole drilled through them. The size of the hole controls how much fuel is drawn into the carb, larger hole = more fuel (richens) - smaller hole = less fuel (leans). Tricky business, but necessary for top performance or to compensate for intake and/or exhaust changes. If you run stock, you shouldn't have to worry about it.
